This latest release from the Dingle distillery in Ireland sees their triple distilled spirit matured in a marriage of ex-Bourbon, ex-Pedro Ximenez, and ex-Madeira casks.
This is a very characterful whiskey, offering a warm aroma of spice, molten honeycomb (hokey pokey), and sea-salt caramel.
Fruity elements from the wood (dried raisin) and vanilla join the blossom honey as well. Dingle is one of the whiskey makers at the forefront of the new wave of Irish distilling.
